We've had a whirlwind end of school year and beginning of summer. I took some pictures of Brendan's field day, (with Aidan along in his Super "A" cape), followed by his last day of school and end of year party with a chocolate fountain. Then we head into my friend Amy's mom's 60th birthday party (with Brendan as my date). We got to see Amy, Aaron and Tamara! So fun!
Then, we head into swim team! Brendan has been loving swim team and is getting better by the day at swimming the length of the pool without (or with less and less) doggy paddle! He loves it and it's a neat concept for a whole team to be made up of several age groups. When he was done swimming, he was so excited to cheer his team on in their races. What a cool thing!

And today to start out our Thursday adventures we met some friends to pick strawberries. So so fun!!!! Click on the pic for our summer set!

And for the *gallons* of strawberries we picked, here's a good recipe!

Strawberry Bread

3 c. flour
2 c. sugar
1 tablespoon cinnamon
1 teaspoon baking soda
1 teaspoon salt
3 eggs
1.25 c. oil
2 10 oz. packages frozen strawberries (thawed and drained with juice reserved)**

Line two bread tins with foil and spray them with PAM. In a large bowl combine all dry ingredients together. Add eggs(beaten), oil and strawberries till just combined. Then add some of the reserved juice until the batter is just thicker than a cake batter, but not as sticky as a muffin batter (~1/2 c). Pour into two pans and bake at 350 about an hour or until a toothpick inserted in the middle comes out clean.

** I used fresh strawberries today and chopped up about 4 cups into bite size pieces and then added about 3/4 c. water to the batter to thin it out as listed above.
